Does the passport prove a bar is genuine?

It proves who stated what, and when. Physical inspection and accredited assay remain the basis for authenticity and purity; the passport makes that evidence traceable and hard to dispute.

Can someone copy the passport code?

A code can be copied, so the passport is always checked against the physical serial, seal and custody record. A mismatch is flagged for review.
